Intelligence or Wisdom if you don't plan on dual classing later. If you do, Intelligence if you plan on dualing to a priest, Wisdom if you plan on dualing to a mage.

In Watcher's Keep (not really ToB, not really SoA), you can up most of your stats on the level with Lum the Mad's machine. As for your conundrum, you're a level 20 fighter, so you CAN'T dual in SoA...you'll never be able to catch up to your current level. Chuck a point of Wis or Int, but definitely NOT dexterity, especially if you're of good alignment.

Big, strong fighter already dumb as a bag of hammers; dumping a point of intelligence can't hurt. You certainly don't want to do away with your to hit and damage bonuses.

I always give my chars around 13+ int and 18 wis (and 18 con) if possible - wis & con for the saving throws and the hight int for lore and dealing with mindflayers.
It can be pretty painful to melee them, since they temporarily drain 5 int (if you have 3 int you will be dead on first strike).

I don't think that there's a best sacrifice, it all depends on your class and (of course) your current stats.

Although sacrificing constitution if you have 15 or more is a big DON'T DO or else you will lose 9 or 10 Hp (unless you are a non-fighter class with 17 or more).

Losing Dexterity is bad for (almost) everybody, but if you have between 8 and 14 then go ahead sacrife that, it's all the same.

So the best sacrife would be intelligence (if you're not a mage-spell caster) or wisdom (if you're not a cleric/druid spell caster), but you don't want those stats to be too low because of saving throw malus and psionic attacks.
