Tells which enemies are say "Undead" and which are"Demons"?

Or a guide of which foes are Evil and which are True Neutral or Neutral Evil? Are there many "Neutral Evil" Or more Chaotic Evil? All this seems important with "The Equalizer" so some sort of "Bestiary" would be fantastic.

The game is loosely based on 2e (well, maybe more than loosely, but there are some glaring differences). So the Monster Manual from 2e is your best bet. Understand, though, that alignments got coded rather strangely in the game, so what the book says will often not match what the game has. One or more of the various fix packs or tweak packs (I forget which) fix a lot of the alignment issues.

Undead are basically skeletons, zombies, ghouls, ghasts, mummies, vampires, and liches (I am sure I missed a couple). Demons are pretty obvious.

for stats and resistances of monsters you can have a look at the monster encyclopedia by shoecream:
    http://www.sorcerers.net/Games/BG2/index_tips.php

as for what is enemy types and alignment you safest bet is to use NearInfinity or Infinity Explorer. Those tools allow you to read the game files and see how monsters are coded. It's not very user friendly and you have to look up the enemies you suspect being evil/undead/whatever (use the clua code of the monster which you can find in the linked encyclopedia), so no lists displaying all eveil creatures in the game.
Most things are pretty obvious though

I recall another comprehensive one that listed immunities and indicated what was affected by the Cavalier's special bonuses as well as what was undead.
I thought it was Planet Baldur's Gate, but the site doesn't look much like I last saw it, but then again I haven't visited in years.
