What class is best for a solo run? I was thinking F/M/T or F/M/C

Going completely solo you do need some kind of thief. Try out a swashbuckler and get drizzits swords

I'd go with either half-elf R/C though they are not as strong in the EE as in vanilla BG2. Otherwise a half-orc F/T would be very powerful as well.

I did a solo fighter / assassin half-orc, and he got Sarevok in three potions of invisibility. Easy as pie.

A Fighter/Mage/Thief is probably the easiest combination that gives you the best of all worlds, while still being very powerful throughout.
You get access to both casting and thieving skills, as well as being good in straight up combat, meaning you are covered on pretty much all bases, and can handle whatever the game throws at you.
However, you will lose out on the highest level of spells, as you'll never reach mage levels high enough to unlock lvl 9 spell slots.

I personally favor the Mage/Thief a bit more - you'll be able to make the most out of both your thieving skills and arcane casting, and as the game progresses you will be able to make up for the lack of fighter levels by using (Greater) Haste and Tenser's Transformation. You'll probably also want to invest points into short swords and/or scimitars/wakizashi/ninja-to weapon proficiencies, and the dual wielding weapon style.
This will allow you to pick up weapons like the short sword Kundane +2, the Scimitar of Speed, Belm +2 and once you unlock the use all items HLA the Scarlet Ninja-To +3.
All three of these weapons grant an additional attack per round, allowing you to come close to the number of attacks you would get if you had actual fighter levels.

Definitely F/M/T for me. Very fun to play, as you can do so many things and do them well.

Actually, my current solo in EE uses Berserker. It hasn't been that bad actually. Given, my first one was a F/T.
