What are you favorite things to do in Chapter 1.
    1. Pick Pocket Ribald for his ring of regen, Yoshimo does it easily with 2 potions of Master Thievery.
    2. Rescue Aerie her and get ring of human influence.
    3. finish the slave quest in Copper Coronet.
    4. Get Azure Edge, and head to gate to kill the lich before heading to Watcher's Keep.
    5. Clear out 1st level of Watchers by getting the unlimited +1 bolts, +1 arrows, Quiver to hold ammo, and get the potion case while there.
    6. After clearing the 1st level of watchers, but not clearing the guardians, I like to buy the Girdle of Hill Giant Strength.

Any other things you like to do early in the game?

You can pickpocket the captain in Delosar's Inn at the bridge district for the boomerang dagger +2, which is a nice starter throwable dagger for your backline mages.
Also, you can steal from the shop of the fence that appears in the southeast portion of the bridge district - just pop a few potions of master thievery (he has 4 of them for sale, so you can easily earn them back)
I usually raid him for all the scrolls he sells as well, then make my way over to the promenade, pop some more potions of master thievery, and liberate all the scrolls that are for sale at the merchant on the stockades to the north, as well as form the lady in the back of the adventurers market.
This way you'll have pretty much all the spells you could want, with duplicates to spare.

Though they fixed being able to get two of them, if you want the ring of the ram early, you might want to pickpocket tolgerias in the government district as well.

Maybe not as early at the start, but as soon as i make it to Trademeet i pickpocket the djin Taquee for the flask of djinn summoning.
You can also pickpocket Treya in Trademeet for the Cloak of unerring strikes (she's a new npc tied in with rasaad's quest line.)
Also, when you take along jaheira in your party, you can run into 'Terminsel' 2 times, both times you can pickpocket him for some okay items including a cloak of protection+2, ring of protection +2 and necklace of protection +1.

Favorite things to do in chapter 1? Everything.

Priorities depend on party make-up, but generally first order of business is regeneration (so Ribald's ring), then perhaps some easy xp with the circus, the lich in the gate district, then over to the lich in the bridge district, then the sewers in the temple district (one nice helmet, and another lich). Then post-haste to the harbour district for the demi-lich and more regeneration.

Perhaps then to rush to the planar prison to get the boots of haste.

Someone really hates the undead. You should loot the Cloak of the Sewers along the way. Even more regen (Troll Form) can't hurt by this point.

I'm kind of the opposite, I like tackling humanoid groups first (Slavers, Kalah, Mencar Pebblecrusher and co., Gallobchair and co., etc). Even with difficulty mods you can use spells like Call Woodlands Beings and abilities like Set Traps to take them out semi-reliably (minimum risk with experience). Most humanoids carry great weapons/armor.

I then visit the Bridge District mostly for Daystar, which is indispensable vs undead, before starting any of the major quests/clearing the first level of WK.

After preparing item-wise, i also like to take down the human opponents first for their gear, so i can round out the pieces i don't have yet, and sell whatever i don't need for some starting capital.
Azuredge is also a pretty great weapon to have vs the undead, though it is kind of costly.

Eh, unless my memory completely fails me, Daystar is in the City Gate area, not the Bridge District, but I will confess to not having played the game in years.

I usually do get the cloak of the sewers as well. And it's not that I hate the undead, but the gate district lich guards Daystar, the other two guard parts of Kangaxx, and Kangaxx himself has the ring of gaxx. Plus, they're fairly easy to handle and give a good amount of xp.

Mencar Pebblecrusher is one of the first stops, if I have a thief as PC, especially for soloing. Their gear isn't that great, except for the cloak of non-detection. If I have a cleric or someone else that uses flails, I make the D'Arnise keep a priority, for Paladins, I go to the windspear hills as soon as possible. If the PC is a mage/sorcerer, I pay the shadow thieves as soon as possible for the amulet of power (also a priority for level drain protection, but not usable by certain classes, so not a priority for those classes, especially for solo runs).

Watcher's Keep is a bit tricky, if you go there at very low levels, less guardians will spawn on the first floor. I'm not sure if this means that one of the guardians with unique weapons will not spawn, but I do tend to save it for a bit later. Also, I generally cheat to give myself all the bags/cases and the infinite arrows/bolts, or returning dart / dagger.
