I haven't played Shadows Over Soubar, so I can't help with those questions.

A stronghold is a place or building in the game that your PC can call his/her own. You mentioned a fighter/cleric, so you have 2 choices for a stronghold: a temple in the temple district or the De'Arnise castle. To get the temple, you must complete the Unseeing Eye quest. To get control of the castle, you need to talk to Nalia in the Copper Coronet and complete her quest.

For a good aligned fighter/cleric, I would recommend:
Jaheira - a fighter/druid you rescue in Irenicus' dungeon
Minsc - a ranger with great strength, also in Irenicus' dungeon
Keldorn - an inquisitor you find by doing the Unseeing Eye quest in the temple sewers
Jan Jansen - a mage/illusionist selling flashers in the government district
Nalia - a thief/mage in the Copper Coronet

    For an evil fighter/cleric:
    Jaheira
    Jan Jansen
Edwin - in Mae'var's guildhall on the docks, you must work for Renal Bloodscalp to get Edwin
Korgan - berserker at the Copper Coronet
Viconia - a cleric in the government district
Haer'Dalis - a blade (bard), you need to talk to Raelis Shai in the basement of the Five Flagons in the bridge district

There are a lot of NPCs around, so hopefully this gives you an idea and some help.
