He's immune to fire, and has magic resistance, but he is completely vulnerable to magically summoned monsters. Buy a wand of monster summoning, or memorize as many MSI, MSII, and MSIII spells as you can.

There was a post not so long ago that discusses quite a few different strategies for dealing with Sarevok. You can find it here.

He's not immune to Magic Missiles. My solo mage killed him primarily with them.

Ehh.. Correct me if I'm wrong, but wouldn't the skeletons and hogoblins just delay him? They're not THAT powerful...

You could try to throw some darts of wounding and stunning at him while he is busy killing all those summoned monsters.

@Trminator, while it's true that skelletons and hobgoblins are really weak...when you summon huge amounts of them, they can mob anybody (though, at no small cost to themselves).
For example, the first time I fought Sarevok, I used up at least two wands of monster summoning, and a few charges from another, as well as all of the summoning spells that I had. Sarevok managed to kill off more than half of the summonings, but in the end he fell to overwhelming numbers.

EDIT: And when I say "huge" I really mean it...picture a screen FULL of summoned monsters, many of them archers, against Sarevok. He may be uberpowerful, but he can't take on so many opponents. He goes down eventually (after having killed a significant amount of monsters).
