Playing as a solo mage, it is extremely frustrating to devote a ring slot to Ring of Freedom of Movement, which makes me "immune to anything, magical or otherwise, that effects[sic] the wearer's movement" and have this not protect me from things like:

    symbol of warding (paralysis)
    ice lance (stun)
those little spore things myconids shoot (stun)

Is the ring broken? Is there a patch that fixes this? If not, is there an item editor that will let me fix it?

I'm pretty sure that the ring only protects you from spells like hold, not the actual attack spells.

The ring works fine. Those spells you list are MIND affecting spells. The ring works against things that physically restrain/impede your movement (walking). The spells you list prevent you from controlling your character(s) at all.
