I just found a decent helm that protects against criticals and lets you see in the dark I think. I am a Fighter/Mage and I know most armor hurts your chance to cast spells right? But what about things like Helms, Gauntlets and Boots? Does this have any adverse affect on my casting?

    Also, do Amulets do anything?

As far as I remember, the only item that screws with your spells is body armor.

You'll find much better than that helm soon enough.

Generic amulets are jewelry and can be sold for gold once you reach a merchant. Magic amulets can do many things. Part of the joy of this game is finding new cool loot and distributing it, so I am not going to spoil anything. Just have fun.

    All helms protect against criticals.

Using most body armor prevents spellcasting (if you click the "cast spell" icon in the bottom action bar, spells will be greyed out if you wear body armor).
DMC is correct, your other gear won't affect your spellcasting.

If your playing as a Fighter/Mage, the 1st level Armor and Shield spells are pretty decent for starters. There are better protection spells as you increase in levels. Stoneskin is pretty good, Mirror Image and Blur are useful as well. So is Protection from Evil. There are many types of items from Bracers to Cloaks to Rings to Helms, etc.. that add protection, increasing your AC. One of the joys I have found in playing a F/M is that your equipment choices and spell selection will change throughout the game as you find more powerful items and scrolls to add to your spellbook. Mix and match until you find the combos that suit you best, there are many!

If you're asking how to activate a limited use per day ability on your amulet, there should be a special ability button on the toolbar that allows you to access it.

The Helm of Infravision you are referencing doesn't need to be activated. It's always "on".

I just wanted to say this is the more informative and kind community I have ever seen. The community lives up to the games very high standards.

I should point out that it isn't explicitly stated in the description for some of the Elfin Chain Mail that you can cast spells wearing it, but it is in the 2nd edition Dungeon Master's Guide and I think there was an off-hand reference in the Player's Handbook citing it as an example of special armor that you can cast spells in. Those books are NOT included with the game.
IIRC The only armor that doesn't disable spellcasting were elfin chain mail and the armors designed for bards. Oh, and robes.
