I'd say Parn should have higher intelligence and lower wisdom. Intelligence is the ability to cover abstract concepts, wisdom is the more down-to-earth thinking. If any of these attributes should be below average, it should be wisdom: he often misses Deed's innuendos. As for the choice of class, pure fighter is also an alternative: a LG fighter can be a member of a supposedly holy order without having any supernatural abilities. If a paladin, either cavalier or vanilla is fine. I suppose the cavalier brings the most abilities to the character, all in all. Eventually, he becomes a top-notch fighter, which could be represented in slightly higher strength score (15 doesn't even give a damage bonus in 2nd edition).

Deed could be a fighter-mage as well. I don't remember any spells that she casts that are markedly divine. Sure, her magic comes from Nature - but where magic comes from in a world is a very complex question. For all there is, the spirits she calls on may be a part of the weave, and in 3rd edition, calling on elemental powers (binding?) was definitely a mage thing. If there was a way, I'd have her as a fighter/sorceress (I don't know if shadowkeeper allows that, though) and Slayn as a mage. Besides, do you see her in plate mail, or even chitin armor? I'd say elven chain is as heavy an armor as she should get. Also... I suppose it ties to her being a druid, but her wisdom is strangely high. Somewhere in the range of 15-16 may represent her character better. You could increase her charisma or intelligence to compensate.
Edit: I haven't played BG for an year now, but I think there was a FMC multiclass for half-elves. You could outfit her this way as well... although as a FMC you will never get to the really big spells. Then again, Deedlit tends to go for more subtle magic, at least in most cases. Mind you, I have only read the manga and watched the OVA series: in the novels, she could have a lot more up her sleeve.

Ghim: 18+ strength is incredible. This is the kind of strength that lets you arm-wrestle an ogre (18/00) and have a chance of winning. Ghim is quite strong, surely - but more than 17 is pushing it. On the other hand, he is quite sociable for a dwarf (7 is below average charisma for the race, and he shows quite the force of personality at times) and I'd argue that his wisdom is also notably higher. Why a berserker, by the way? He would seem like the typical dwarf fighter in terms of attitude towards fighting. A berserker not only lusts for battle but basically forgets himself in it. A mod may help by bringing in more fighter kits, or improve the proficiency bonuses to their P&P levels (5 stars give much more than they do in BG II). Actually, his link to the church might even make him a dwarven paladin of sorts... Some race-class restrictions make little sense.

Slayn could do with slightly more constitution and less strength, although he is ok as it is. An attribute score of 10 represents the average human, have this as a reference point. Other than that, as I mentioned, he might be more of a mage - generalist, diviner or evoker. His approach to magic is based more on scholarship and formulas than on the intuitive link with magic that sorcerers supposedly have.

Etoh: You have him pretty much covered, stat-wise. In the mods allowing for more kits there may be a better deity for him, although Lathander is VERY close to his anyway. Then again, you may just like the mechanical changes they make to bring the cleric closer to its P&P version.

Wood... I actually don't tie him with the group, maybe because he misses most of their adventures. Why not have the a BG NPC in the party? Imoen could make a great plot hook, maybe substituted by Nalia or Yoshi while she is... inconvenienced. Other than that, I would lower his charisma, maybe compensate in intelligence. Wood is a bit on the sour side, in my opinion, and he's not such a grand looker either to justify an above-average score. As for a kit, vanilla is fine, or you could have him as an assassin.

Edit 2: I have mentioned several mods. Modding can and usually will seriously change the game. However, some may change it for the better. The ones I can recommend are (as taken from the http://www.gibberlings3.net site)

    - Divine Remix - do you imagine Etoh casting dolorous decay, harm or summoning a demon? Great customization options for clerics, and changes the ranger and paladin spell lists as well.
    - SP collection
    - TUTU Tweak Pack - restores the original proficiency system. As it is, there is very little difference between 3 and 5 dots in a weapon.
    - Tactics - makes some fights harder (optional), improves NPC's and monster's AI

However, you need not, and imo should not, install everything. These are just options.
