Rotku's Kitchen Madness #1

    Okay, my turn to cook tonight. Living in a flat with four others, one of who refuses to cook (so therefore doesn't eat), so I tend to cook twice a week. Anyway, tonight I'm feeling particularly lazy, so something easy is called for. Unfortunately one of our flat mates is particularly fussy eater, so it does limit me some. As it's the end of the week, the house is rather bare of food, so going to have to make do with what I have.

    Cleaning out the freezer yesterday I found some old pastry, so that gives a good starting point. Doubly so as it has a few recommended uses on the back of the packet. With a few changes, to make use of what i've got, we have something resembling a meal!

    Chicken and Veggie Pastry
    Ingredients
    • Pastry - Puffy pastry
    • Cooked chicken meat - I'm using some left over breast we had a few nights ago
    • Zucchini - Home grown!
    • Spring Onion
    • Cottage cheese
    • One Egg, for glazing
    Mix all ingredients (minus egg and pastry) together.
    Roll the pastry out into triangles (hard to roll into triangle - aim for a square then cut in half, easier that way).
    Divide the chicken mixture evenly among the pastry triangles then fold the triangle in half, pinching the edges together, enclosing the chicken. Dipping your fingers in a bit of water helps seal the two sides together.
    Mix the egg with a dash of water (a tablespoon should do it) and brush on top of the pastry.
    Bake at 180 C for half an hour, until golden and puffy.
    Eat carefully - puffy pastry has a tendency to make a huge mess when I eat it, with bits exploding across the room. Maybe I'm just 'uncivilized' and can't eat 'properly'.

    And as I like a bit of variety in meals:

    Tuna and Corn Pastry
    • Pastry - Puffy pastry
    • Small can of tuna - drained
    • Handful of corn - I'm using an uncooked cob that we had left
    • Grated small kumara (that's sweet potato, for you foreigners)
    • One Egg, for glazing
    Same method as for the chicken one. Just this time I'm going to give the kumara (sweet potato) a quick nuke in the microwave, as I find often it doesn't cook as fast as other parts of meals.

    Now we just sit back half an hour and keep our fingers crossed. Worse comes to worse, it'll taste disgusting which means more for me!

    Conclusion
    I really enjoyed the chicken one. Real nice subtle flavour. Ended up adding a bit of red capsicum (bell pepper) into the mix, as the colour seemed too bland otherwise. The tuna one had one simple, over powering taste - canned tuna.
