What happens? I know you can only choose one (in an unmodded game).

Does Brus give you a choice, or does he just send you on the path to one Stronghold?

    What about Dual classed characters?

I think in my game Brus pointed out one stronghold only; he picked fighter over thief.

[EDIT]Reading below, maybe I recalled incorrectly. But CamDawg's point is clear: what Brus says is just dialogue that suggests a stronghold; it doesn't force you to take the one he said.

Plus Brus only says this as soon as you start chapter 2 (unless you avoid him somehow), so you won't get a chance to do the Maevar quest yet.

Ok, well let's take your example. If you're playing a F/T, and Brus suggests the F quest for you, what happens if you expose Mae'Var's treachery, and do all the subsequent quests. Will you be offered the thieves guild?

What Brus gives is only a helpful hint. It doesn't limit your choices. You can savely choose which one to do and get that one. Just be sure to do it first or turn down the other one.
In my game I got both tips, one for the fighter and one for the thief. The boy gave one of the two and the other was given by Gaelan IIRC.

For Dual-classed charecters Brus tells you of the quest for your active class. You will also be offered a stronghold quest only if that class is active.
For Multi-classed charecters I always got told of Firkaag's quest.

You can only take the Fighter stronghold as your second stronghold. Clear De'Arnise keep then don't talk to Nalia (or if you have her let her stay with you but dont accept her offer).
Else keep it for after you have finished your other stronghold quest.

Is there a set heirarchy for getting strongholds? For example, I know if you are a multi-class and part fighter, you can receive two strongholds by doing the fighter's stronghold second. What about the other classes, like if you're a M/T, or a C/M for example?

This is what, the 812th time this topic has come up in the last few months? ;)

Multi and dual-classed characters get a sum total of one stronghold. Which one you keep is based on which one you accept first. Having Gaelan or Brus direct you to a stronghold is not a prerequisite for getting it. Usually they direct you different places anyway--Gaelan tells a F/T to talk to Nalia while Brus tries to get you to talk to Renal. (This is due to a different weighting of their dialogue transitions, not that anyone cares. :D )

Being able to get de'Arnise Keep after you already have a stronghold is a bug and is not an indication that multi/dual-class characters get more than one stronghold. There is no heirarchy. If you want more than one, download and install one of the multi-strongold patches--it's easier than exploiting the bug anyway.
