So I've been to the sarcophagus, placed the items on the altar, killed the statues and spoken to the giant statue.

However, between placing the items on the altar and speaking to the statue, I quick saved. After quick saving I reloaded my game, so everything has been completed but I have no way of initiating conversation with the giant statue. I've tried:

-leaving the keep with all 3 items, returning and placing them all back on. I get the bell chime but no conversation with the statue
-taking all 3 items and sleeping, trying the ritual again. Bell chimes, but no convo.

    Any ideas?

Do you have a backup like an autosave? In my experience, quicksaving while a game progressing script is still in the middle of executing, but then reloading the quicksave, has a habit of breaking the script mid-point. Another classical example of this is quick-saving after assembling the Rod, which can prevent the Unseeing Eye from appearing.

Reverting to an earlier save as Beren suggests should work, alternatively there might be a variable you could set through the console to trigger the talk, but I have no idea what that variable might be.

I've never had it happen to me in this way, though I do try to avoid saving while I suspect a script might still be running. I have experienced statues disappearing when opening a door behind which they were waiting. This seems to be a random thing as well.

Are you sure you didn't already "activate" the portal and now there is no reason for the giant statue to talk to you?
