    i personally like to start off with a fighter and once he reaches lvl 9 i dual-class him to a fighter/mage. from the moment you gather 500000xp you have a pretty neat killing machine. i prefer the dual-class characters over multi-classed ones because you get much earlier good spells, e.g. with a multi-classed f/m you'll never get 9th level spells in SoA.

    I find thief is the best, becoming a swashbuckler in BG2 as there is a serious lack of good thieves in BG2. Plus, your abilities are the only ones what can go above 19 without cheating and a dexterity of 25 gives some amazing thieving abilities like no other thief possesses. Plus their ability to specialise in any melee weapon a theif can use and put three slots in duel wielding, they really are lethal. Backstab just isn't necessary, they're great frontliners.
