    Longswords are the most commonly used weapons. That's why.
    Enchanting items take a lot of time, and you don't have that. that's why you can't make your own weapons and armors. Time limit in this type of game would be disasterous, so it is not implemented, but they have taken out the most time consuming operations, like item creation, which usually (in PnP game rules) takes about month to complete.

    And yet Cromwell can forge Dragon scales to an armour in one day.

    I'm fairly sure there is a difference in that but with some of the things you can have forged I'm sure would take longer then a day.

    Yes but in morrowind enchantment is completely broken. IF BG had the caliber of items that are in morrow wind it wouldnt even be worth playing. Morrow wind is a game where you can become invincible quickly unless you role play, bg scales that a little, which is good.
