I managed to get a human berserker through to the last battle of ToB before giving in and pulling in "assistance" from the statues in the Pocket Plane.

Dwarven Berserker is definately a good start. Go with max Con/Wis - you can use items to boost your Str/Dex. I.e. plan of him wielding Crom Feyr.

Next would be an elf Assassin for the sneaking and backstabbing. If you were going for a brute-force approach, I'd replace him with a Kensai. Alternatively, use a halfling, with a strength enhancing magic item.

After that, you should have a Monk, just so at least someone has the high saving throws needed to survive some nasty spells.

I like the Half-orc Wizard Slayer idea, but I'd probably go with a dwarf, equip him with a girdle of <something-giant> strength to increase the Str, and spend the points on Con, Dex and Wis. The Answerer would be a nice sword for him/her to use.

After that, an archer could be useful. Sadly, archers are quite weak in BG2 (compared to BG1, and assuming no mods), but I think that a custom built archer could be reasonable, and there are some nice bows in the game.

Finally, I think the Inquisitor idea is a good one. If nothing else, but to be able to use the Holy Avenger.
