What's the best way to get rid of these gauths?

As for me, Valygar is "my" ultra specialist beholder killer, whatever their form, he kills them all.

    Simple:
Valygar + Shield of Balduran + Celestial Fury (THE katana, if not THE best 1 hand weapon for raw damages and quickness) = TOTAL SLAUGHTER (and very very quick..). :)

This is simple, Valygar wiped out for me *alone*, ALL the Unseeing Eyes Beholder Maze, AND ALL the Underdark "" idem, equiped like this. Add to this his ability to perfectly become INVISIBLE and BACKSTAB *at will* if necessary (up to x3 above lv13, if i remember), and he really becomes a complete monster for this exercice AND to explore very quickly those mazes (the stealth/backstab ability was for exemple VERY useful in the underdark to quickly deal too with some other "people" around the different beholders.. :) ).

Everytime he sees a beholder, that"s simple, he takes his balduran shield that is permanently in a corner of his inventory, AND rushes on him far in front the rest of the group, and do all the job alone : very neat, quick, safe, and practical.. and easy. Almost too easy now, rolleyes.. beholders simply make me laugh now : they simply mean VERY easy big xp and possible uniques items, that's all. :) The rest of the time, in a no beholder situation, Valygar, the way i use him, simply becomes again the very good 'standard'/'normal' backup versatile all around fighter he is (melee AND archery possible, 1 hand/2 hands, shield/no shield, stealth/no stealth, etc), like for exemple uses his bow (no shield configuration then), or even darts + shield (when i find a couple of good bleeding/stunning ones.. even with no efficiency points wasted in them), and Celestial fury and/or a good spear (if no shield), etc.

Excellent Valygar so far for me.. really an excellent and unusual non standard NPC imo (like Kivan was in BG1, almost the same 'plilosophy'/'play style'.. in even stronger and more versatile with the new rules and BG2 possibilities -2 hands styles, backstabs, new weapons like katanas, etc-)! His force is in his excellent versatility, that's sure! He can even uses spears VERY efficiently, ideal when he uses his bow and someone else is using Celestial Fury, for exemple, lol.. :) ;)

Other NPC fighters could use this 'tactic' against beholders, evidently (basically simply the best possible 1 hand weapon + SoB.. et voilĂ ), but no one evidently can use the Celestial Fury like Valygar (2 natural proficiency points in it) AND the stealth capacity too like him for backstab eventually with it too!... On the other hand, i'm sure that Korgan must be VERY fun to see in this exercice too.. not with a katana but a simple good axe/hammer, but should be VERY fun to watch too in this situation, imo.. would be "different", but would be very fun to watch too imo.. next time (a completely different party), i will do this with him, sure.. all depends the NPCs -and weapons- you have at the time after all..

nb: cheesy, you said cheesy ?! yes, that's true, sigh.. but after all, this item (shield of balduran) exists, after all.. ;)
