    Comté AOC (French certification of origin), a cheese made with unpasteurized milk from Montbéliarde cows originating from specific parts of two French régions (Franche-Comté and Rhône-Alpes). The aging process can vary between 12 months and 30 months (and more).

    Favorite cheese? Say what?

    I grew up in Wisconsin and have spent a lot of time in France. I think cheese is really just part of my destiny.

    Anyway, favorites. . . Lately I've been eating a lot of string cheese. I love most soft cheeses: brie, camembert, soft goat cheeses, and various others that I've tried but don't remember the name of. I like white cheeses better than yellow cheeses. I love provolone, fresh mozzarella, havarti (especially with dill), jarlsberg, Swiss, Emmental, comte, and there's another French cheese that I loved but now I can't remember the name of it. I'd get it sometimes instead of comte. Baby Bels -- the original. Oh, and raclette!

    I know I'm missing some. My favorites vary with my mood.

    Obviously cheddar, but I'm biased! :p

    I grew up in Somerset, so I either went to school with or am (distantly) related to some of the producers. For the record, Green's* is bloody good (but probably difficult to find outside of the county). Gould's** cheddar is available in M&S and does the job almost as well, even if it's pasteurised and therefore not as flavoursome. Their Glorious Glastonbury is also a good shout, and a bit less dear. For tourists to the area, some of the cheddar available in Cheddar itself is nice, but overall what you'll find there is a bit bland & over-priced. Westcombe is another excellent local cheddar that's not quite as strong as Green's, so a bit more accessible to those reared on the supermarket definition of "mature".

    For more outlandish fare, Cornish Yarg is a pleasing, mild cheese that comes wrapped in nettle leaves for a bit of tang. Well worth trying, although it can be a bit pricy.

    ** Bias disclosure 2: distant cousins of my maternal grandmother. I also went to school with their daughter. Honestly, we're not as inbred in the Westcountry as this makes us sound... :hahaerr:

    I like a wide variety of cheese, but I suppose Swiss and pepper jack are my favorite.

    None, actually. I dislike virtually all cheese. I can handle mozzarella as part of pizza, but that's about it. I certainly wouldn't raise it to a "favorite" category, as it's just the one cheese I don't dislike.

    I know that will probably cause gasps of horror, etc., but it is what it is.

    Pepper jack! I forgot about that. I also really like parmesan in salads. On the other hand, I don't care much for Asiago. Not sure why.

    Correct. Uno formaggi on my pizza (but lots of pepperoni).

    Then again, I haven't had a piece of pizza in longer than I can remember and sure won't have one any time soon.
